This is an amazing muffin recipe. I first ate one at Becky's house in Kenya. I've been baking them ever since. You can find the recipe in the Newcomer's Cookbook.
2 c. flour
3/4 cup sugar
2 1/2 teaspoon baking powder
1 Tablespoon instant coffee (can be any type - if omitted, it makes them taste different)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup milk
1/2 cup melted butter, cooled slightly
1 egg, beaten
1 teaspoon vanilla
3/4 cup chocolate chips (or semi-sweet chocolate chopped into chip size pieces - Cadbury Bourneville is the BEST)
Combine dry ingredients and mix well. Add liquid ingredients and mix together only until combined. Do not overmix as it makes muffins tough. There may be a few lumps, which is okay. Gently mix in chocolate chips. Fill greased muffin cups 2/3 full and bake at 375 degrees for 15 to 20 minutes. Makes 18 muffins (approx.)

I first had these at Aunt Linda's house! :) We had them a lot growing up and now my kids love them. They are really easy and the ingredients are all easy to find. Love um!- Kara D.
I added in another 1/2 teaspoon of instant coffee for a slightly stronger coffee taste, a little extra cinnamon, and only used a half cup of chocolate (one whole large bar of Cadbury Bourneville). I like them a little better that way, as did Jared Wilks. In fact the whole Wilks family loved them, Jared was just the only one to sample both batches.
