Since I'm now living in the land of fresh peaches, here's a great cobbler recipe from my Mom -
Perfect Peach Cobbler
3 cups peaches - sliced
1 Tablespoon lemon juice
1 cup self-rising flour
1 cup sugar
1 egg
1 stick margarine
Place Peaches in a baking dish (8 x 8). Sprinkle with lemon juice.
In a separate bowl, lightly mix flour, sugar and egg. There will still be lumps - don't worry about those.
Spread the mixture over the peaches.
Pour melted margarine over the top.
Bake at 375 for 30 to 35 minutes or until nice and brown.
Note: if peaches are not sweet, you may sprinkle some sugar on them after you put them in the baking dish. Let sit while you are mixing the topping.
